• 2 eggs OR 90 ml water
• 1 tbsp olive oil
• 1 pinch salt
• 33% grey pea
• 33% oat
• 33% buckwheat
Instructions
2. Raw material – raw vs roasted
Raw material:
• Soak grey peas for 8–12 hours
• Boil for 30–40 min until soft
• Dry or use directly
Roasted raw material:
• Can be ground directly
• Provides a rounder flavor, shorter cooking time
• Lower enzyme activity, more stable dough
3. Grinding
Grind the ingredients in a blender into a fine flour.
• Pulse setting
• Sieve out coarse particles
• Adjust texture depending on desired consistency
4. Dough & shaping
Ingredients:
