High-Protein Porridge – a flexible base from breakfast to a complete meal

Our high-protein porridge is developed as a functional and nutrient-dense staple, rather than a traditional breakfast product. It is based on locally produced ingredients with high protein content, slow carbohydrates, and natural fiber. The result is a stable blood sugar response, long-lasting satiety, and a wide range of uses in both everyday diets and professional kitchens. The porridge is free from added sugar and fast carbohydrates and is particularly suitable for people with insulin resistance, but works equally well for active individuals with high demands on nutrition, taste, and sustainability. The combination of plant protein, fiber, and healthy fats makes the porridge a robust foundation in a modern, circular diet.

Ingredients

Preparation – high-protein porridge pancake

Ingredients (1–2 servings):

  • 1–1.5 dl prepared high-protein porridge
  • 1 egg
  • Spices to taste, for example:
    • garlic
    • smoked onion or smoked paprika
    • herbs (thyme, oregano)
    • salt and pepper

 

Instructions

  1. Mix the porridge and egg into a smooth batter.
  2. Add spices according to desired flavor profile.
  3. Heat a frying pan with a little fat (butter, rapeseed or olive oil).
  4. Fry on medium heat for 2–3 minutes per side until the pancake is golden and firm.

The pancake can be served as a main component of a meal together with vegetables, fish, meat, legumes or sauce – in the same way as potatoes or other carbohydrate-based side dishes.

  • Protein: approx. 18–22 g
  • Fat: approx. 10–14 g
    • mainly from eggs and seeds
  • Carbohydrates: approx. 15–20 g
    • slow carbohydrates, low glycemic load
  • Fiber: approx. 6–9 g
